Garlicky Bruschetta with White Beans

Ingredients
1 can diced tomatoes
1/2 cup grape tomatoes, halved
1 can white cannelloni beans, drained
8-10 basil leaves, julienned
3-4 garlic cloves, diced
1/4 cup extra virgin olive oil
½ cucumber, diced
2-3 Tbs balsamic vinegar
1/2 tsp Celtic sea salt
1/4 tsp white pepper
French baguette, sliced
Instructions
Brush baguette slices with olive oil and toast. Be sure not to over-toast. You want them crispy enough to hold the topping without getting soggy too quickly but not hard enough to break a tooth.
Add the topping ingredients to a large bowl and gently mix.
That’s it! Add more seasoning, olive oil, or vinegar to taste.
