Those who know me, know I am a huge fan of anything coconut, especially coconut milk. So, when I ran across this coconut milk at the health food store I was very excited. It’s a bit pricey ($4.99 Lassen’s Whole Foods) so, I will probably not be buying it all too often. I went with the vanilla flavored and it really is soooo delicious. Smooth and creamy, it almost tastes like a melted vanilla milkshake without all the sugar. It’s very similar to Sally Fallon’s Coconut Tonic, which I usually have in my fridge at all times. You can use this just like you would milk on cereal, in coffee or drink it straight.

Medium-chain fatty acids are found in butterfat and tropical oils such as coconut oil. MCFA’s are absorbed directly by your body and, rather than hanging out on your booty, are used up as quick energy. Coconut milk contains lauric acid which has antibacterial, antimicrobial, antifungal and antiviral properties. Coconut milk contains calcium, potassium, chloride, and vitamins A and E.

INGREDIENTS: Coconut Cream (Water, Coconut, Guar Gum), Calcium Phosphate, Magnesium Phosphate, Carrageenan, Vitamin A Palmitate, Vitamin D-2, L-Selenomethionine (Selenium), Zinc Oxide, Folic Acid, Vitamin B-12.

Coconut milk or tonic is a great alternative if you have allergies to dairy or soy. My goal this week is to make coconut milk from scratch. I had the pleasure of meeting a very nice lady at a friend’s house who gets her coconuts at the little Filipino Market in Pismo Beach right down the street from my house. I’ve been wanting to try this for years but was a little intimidated…I think I’m ready! I’ll keep ya posted!
