Cilantro Pesto

Cilantro is not only delicious but is also well known for its powerful health benefits, specifically its detoxing abilities. It is able to bind and pull heavy metals from the body. This recipe is so easy and can be used in a plethora of ways: condiment for any Mexican or Thai dish, dip for veggies, mix a spoon in your hummus or other dip for extra flavor, and most seafood would be more than happy to be paired with this savory sauce.

Metabolic Type

  • This recipe is great for Parasympathetic types.
  • Sympathetic types should substitute walnuts or pumpkin seeds for cashews.

Recipe type: Condiment
  • 2 bunches of cilantro
  • 1 cup walnuts
  • ¼ cup pumpkin seeds
  • 3-5 cloves garlic
  • 1 Tbs raw apple cider vinegar
  • ½ tsp sea salt
  • olive oil
  1. Add all ingredients except olive oil to food processor or Nutribullet and pulse until the mixture is pretty finely ground. Drizzle in the olive oil until you get the consistency you like.
  2. Add to wraps, salads, mix in cultured sour cream for a tasty dip, and anywhere you would use mayo.
