Super Easy Pumpkin Mole

This amazingly easy mole has a surprise ingredient that adds even more nutrition to this rich and delicious sauce. Great with shredded chicken tacos or enchiladas!
  • 3 tbs Grassfed butter (Kerrygold is my fave)
  • 1 tbs Onion flakes
  • 4-5 Garlic cloves, diced
  • 2 tbs Arrowroot
  • 4 tbs Red Chili Powder
  • 1½ tsp Cumin
  • 1 tsp Cinnamon
  • 3-4 scoops Standard Process Chocolate SP Complete
  • 1-6 oz can Tomato paste
  • ⅓ cup Pureed pumpkin
  • 2½ cups Organic or homemade chicken or veggie broth
  • ½-1 tsp Sea salt
  1. Slightly brown arrowroot, onions and garlic in butter.
  2. Blend in spices, tomato paste and pumpkin with a whisk. Add a bit of broth if it's too thick.
  3. Add in SP Complete to your taste starting with 2 scoops.
  4. Gradually add in broth and heat on low for five minutes.
  5. Enjoy with any Mexican dish!
