Thanks to Diane over at Balanced Bites for this tasty recipe. I did a few of my own tweaks as I always do. As we are not grain-free in our house, and I didn't want to shock the family too terribly much, I went gluten-free rather than grain-free and added a brown rice pecan bread that worked out really well with all of the wonderful flavors in this dressing. Beet Blast Salad 2 raw beets, grated 1/4 - 1/2 head of cabbage, grated 1 tsp fresh dill Juice of 1 lemon 2 Tb whey Sea salt to flavor Mix everything together in bowl until you get some nice juice action going. I get my hands in there and give it a nice massage. Warning - beets stain. If you have plans later, you may want to wear plastic gloves.
